Easy Gluten Free Chocolate Cake with Chocolate Ganache

This cake is divine! It is super rich and easy to bake for special occasions to share with great friends. I must warn you, this cake is so chocolaty, you will need a glass of milk for this cake. I baked this cake to enjoy with a very special couple, my friends Carlos and Charina who were soon to get married in a few days. I also added a butterfly made out of strawberry. It was perfect for that romantic occasion!

Usually when baking, you separate in two mixing bowls, the wet ingredients from the dry I love this recipe because all you need to do is add all the ingredients in one bowl and bake.

Ingredients:
¼ cup of brown rice flour
1 cup of white rice flour
¼ cup of tapioca flour                               = 1 ½ cups of GF flour
¼ cup of coconut flour
¼ cup of corn starch

7 tablespoons of Hershey Cocoa (I used 2 different brands just because. You can use what you prefer)
7 table spoons of Nestle Cocoa
½ teaspoon salt
½ teaspoon baking soda
¾ teaspoon xanthan gum
1 cup brown sugar (Low sugar substitute: ¾ cup of applesauce, ½ cup of honey/maple syrup/agave)
¾ cup of sour cream/ plain yogurt at room temperature (You can use low fat sour cream/plain yogurt. For lactose recipe, use vegan or lactose free sour cream/plain yogurt)
½ cup vegetable oil
2 eggs beaten and at room temperature ( For egg allergies, use ½ cup of egg substitute)
¾ of warm water

Instructions:
1-Preheat the oven to 350 and grease a 9 inch pan
2-Mix all the dry ingredients in a bowl
3-Add the wet ingredients one at a time mixing in between each ingredient

4-Pour the batter into the greased pan and smooth out the top so it can bake flat
5-Bake for 30 minutes
6-Remove from pan and allow to cook on a rack

Ganache topping:

Ingredients
1/2 cup chocolate chips (or any chocolate)
½ cup whipped cream

Instructions:
1-Melt chocolate chips (Melt in :double boiler, microwave-1 min at a time mixing in between, or on low in a sauce pan
2-Once melted, add whipped cream
3-Remove from heat and allow to cool
3-Slowly pour the warm ganache over cake in sections, smoothing out the ganche .

You can wait for the ganache to dry for a matte look or eat like that with that glossy sparkly ganache.
